Kristy’s Kreations/Lemon-Caper Capellini

6 ounces capellini (angel hair)
2 teaspoons olive oil
1-2 garlic cloves, minced
1/4 cup minced parsley
2 tablespoons fresh lemon juice
1 tablespoon capers, drained and chopped
1/4 teaspoon salt and some freshly ground pepper (both optional)
1. Cook the capellini according to pkg, drain and keep warm.
2. Meanwhile, heat a large nonstick skillet. Swirl in the oil, then add the garlic. Saute until the garlic turns a rich, nutty brown, 2-3 minutes (try to keep heat fairly low so the garlic doesn’t burn). Add the capellini, parsley, lemon juice, capers and salt/pepper; toss to coat.
***Great recipe if you like capers as I do. I did not chop or drain what I used because I like the flavor so much and I used about a 1/2 cup, I also added about a cup of spinach while sauteing the garlic*** This recipe is from a WW cookbook I have, it serves 4 and is a 5 points plus value per serving.
