
Baked Asparagus Omelet
6 Servings – 6 Points Plus
Ingredients:
- 1lb Fresh Asparagus (Tough Ends Trimmed)
- 1 Cup Shredded Part Skim Mozzarella Cheese
- 1/4 Cup Chopped Green Onions
- 3 Large Eggs
- 1 Cup Fat Free Half & Half
- 1/2 Cup Eggs Substitute
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
Directions:
Microwave or steam asparagus until crisp/tender. Drain and arrange in bottom of a pie pan. Sprinkle cheese & chopped onions evenly on top. Combine eggs, half & half, egg sub, salt, and pepper, and pour over asparagus slowly.
Bake 40 minutes @ 350 degrees.
