Frugal Recipe Box ~ Chicken Chowder Recipe

This sounds like such a wonderful recipe, and with the boxed potatoes and chicken broth on sale everywhere this week, this recipe is both frugal in time and in money. I’ll be sure to try this recipe out this week. This is an ideal recipe for a nice cold winter’s day.

Chicken Chowder Recipe
Makes 4 servings

1/2 cup shredded carrots
1 cup skim milk
1/2 cup chicken broth
1/4 tsp. black pepper
1 cup onions, chopped
1 potato, peeled and cut into 1/2″ chunks
1/2 lb. uncooked boneless, skinless chicken breast cut into 1″cubes
2 15-oz. cans cream – style corn
1/2 cup dried potato flakes
1/2 cup shredded low-fat cheddar cheese

~Combine all ingredients except potato flakes and cheese in slow cooker.
~Cover. Cook on low for 5-7 hours, or until potatoes are tender and chicken is thoroughly cooked.
~ Add potato flakes and stir well to combine.
~ Cook on high, uncovered, for 5-10 minutes, or until chowder has thickened and dried potato flakes have dissolved.
~ Top each serving with cheese.
