Frugal Recipe Box ~ Wild Rice And Turkey Casserole

This is one of my all time favorite recipes to make when we have left over Cooked Turkey!!
Very economical and very child friendly!!

Wild Rice And Turkey Casserole
(Makes 4 Servings)
“Weight Watchers”

6 ounces Wild Rice (*I use Uncle Bens Wild Rice in the orange box)

1 TBSP Butter ~1 tsp. butter
3 cups sliced mushrooms
10 ounces diced cooked Turkey
1 cup evaporated skimmed milk
2 packets low-sodium (or regular) instant chicken broth mix
1/4 teaspoon ground black pepper
1/4 cup Grated Parmesan Cheese (*I like to use Fresh Parmesan Cheese)

~Cook rice according to package directions. Drain if necessary and set aside to cool.
~Preheat oven to 325 degrees
~In large nonstick skillet, melt 2 teaspoons of the butter; add mushrooms and cook over medium heat, stirring frequently, 2 minutes. Remove from heat; stir in rice, turkey, 1/2 cup water, and remaining ingredients, except cheese and remaining butter.
~ Spray 9-inch square glass baking pan with nonstick cooking spray. Transfer rice mixture to prepared pan. Bake until heated through, about 40 minutes. Top evenly with cheese and remaining 2 teaspoons butter; bake 5 minutes longer, or place under preheated broiler until lightly browned.

**When I make this, I use the whole box of Uncle Ben’s Wild Rice (Orange Box) and I put a cup and 1/2 of turkey meat, and a little more of the evaporated skimmed milk to make it into “6 Servings” .
